Summer Salad

Summer is here & it’s a beautiful time for a lot of fresh produce. Check out this recipe a friend introduced me to. I’m definitely no chef, so any recipes that are easy to execute are my jam.

INGREDIENTS

  • 2 large heads of romaine lettuce (about 4-6 cups sliced)

  • 1 cup cherry tomatoes (quartered)

  • 1 cup chopped cucumbers

  • 1 cup chopped artichoke hearts

  • 2 cups pepperoncini (chopped)

  • 1/4 cup diced red onions

  • 1 cup cubed mozzarella

  • 1 (15oz) can chickpeas (drained + rinsed)

  • 1/2lb salami sliced 1/8” thick + cut into 1/4” ribbons

  • Italian Dressing:

    • 2 to 3 medium cloves garlic (minced)

    • 1/4c extra virgin olive oil

    • 1/4c red wine vinegar

    • 2 tbsp freshly squeezed lemon juice

    • 2 tbsp dried oregano

    • 1 tbsp dijon mustard

    • 1.5 tsp kosher salt

    • 1 tsp honey

    • 1/4 tsp freshly ground black pepper

INSTRUCTIONS

  • Assemble the salad by placing romain in a large bowl

  • Top with,

    • chopped mozzarella

    • chopped salami

    • chickpeas

    • artichokes

    • cucumbers

    • pepperoncini

    • cherry tomatoes

    • red onions

  • Whisk the dressing together in a small bowl

  • Pour the dressing on top of the salad & gently toss

  • Top with parmesan if desired
